Retail Beef•In 2009 we began the retail program to make available of smaller quantities of the beef. The animals are raised the same as those used in the share program, described elsewhere on this website. •The carcass is dry aged a minimum of 17 days and the animals are raised as outlined throughout this website. •Most cuts of beef in the share program are also available by the pound in the retail program. Steaks and roasts (all are boneless) are wrapped one per pack, stew and cube steak are about one pound/pack, ground beef is one pound per pack.•Weights over the last couple years have been: ribeye steaks 0.7lb each, strips are about 0.6 lb each, roasts 2-3 lbs each, sirloins are big and up to 2 lb each and tenderloins 2 steaks about 1 lb.
