Cube Steak/Stew Meat Option

Only For Those Who Order 2 Shares!

The product is mostly boneless, with ¼ inch fat remaining on the steaks. This option takes some traditionally less tender roasts and makes them into stew and cube steak.

Ground beef will have enough fat to be good for grilling (85-90/15-10%) – anything more lean will probably not grill well!

The following “Guestimates” are for 2 Shares (a “side of beef”) and is a conservative estimate!

Roasts:  about 10 lb

boneless chuck roast

eye of the round roast to be cut in fajita strips in ONE pound packs

 Steaks:  about 90 lb

blade steaks ( also called flat iron steak )  ¾” thick

rib eye steaks 1” thick

strip steaks 1” thick

fillet mignon, greater than 1” thick

top sirloin, 1” thick

London broil made into cube steaks (about 1 lb packs, of two or more steaks per pack depending on size)

bottom round steaks made into cube steaks(1 lb packs, of two or more steaks per pack depending on size)

rump roast make into cube steak

Sirloin tip roast made into cube steak

Stew Meat: about 20 lb

 stew meat in 1- 1.5 lb packs

 boneless shoulder roast made into stew meat

 Ground Beef: about 80 lb

ground beef in 1 lb packs (85-90% lean/10-15% fat). Note this is NOT scientific; it is an eyeball judgment made by the butcher at the time of cutting and trimming and is not exact!  It is their best estimate.

 

Total about 200 lb
