Here are a few pictures of the ribeyes from some of the calves we delivered in 2005. Elsa and I attend all of the carcass cuttings in order to measure the ribeye area, estimate back fat and to photograph the marbling of the ribeye. We use this information to fine tune the genetics of our cows and bulls in the Beef Purchase Plan. Since each animal is different,  we can not guarantee that your beef share will have ribeyes that look exactly like those below.

The various shades of red seen in these pictures is due to photographer's ineptitude - that's Bill !
